Buckwheat, Banana and Almond butter nut muffins

Perfect for Breakfast or a small snack with a hot drink! Sugar free, gluten free & oil free.

ingredients:

1c buckwheat flour

1c almond meal/buckwheat flour

1tsp baking powder

1tsp baking soda

1tsp cinnamon

1/4tsp salt

1tbsp stevia/maple surup

chocolate chips

wet:

2 ripe bananas

1c almond butter

1/4c almond milk

1tsp lemon juice

method:

heat oven at 180c

mix dry ingredients in a bowl.

Mash bananas and stir the wet ingredients into the dry.

if too sticky add more milk.

pour batter into 6 cupcake/muffin tins

slice a banana and add one slice in the middle of each muffin.

place in oven for 15-20 minutes.
