Simple oil free granola

This is a one bowl recipe - meaning anyone can do it and less washing up! Granola is overpriced to buy now that it's so much cheaper to just make yourself, and you can personalise it to how you want it! This is just a base recipe but I love to add dried figs, deccicated coconut and Lecuma powder! Enjoy!

Ingredients:

2 cups rolled oats (200g)

1 cup chopped almonds (160 g)

1 cup chopped dates (170 g)

½ cup chopped walnuts

1 tbsp ground cinnamon

1 tsp vanilla extract (optional)

3/4 cup Agave or maple syrup

Tbsp coconut sugar (optional)

Method:

  1. Preheat the oven to 320ºF or 160ºC.

  2. Mix the dry ingredients in a big bowl

  3. Add the wet ingredients and mix well. You want it to clump together slightly in bits but not be too sticky!

  4. Spread the granola onto a baking tray and bake for 25 minutes or until golden brown, stirring every 10 minutes to get a more crumbly granola. (Leave some big clumps for gorgeous clusters!)

  5. Remove from the oven and allow the granola to cool completely. Store in an airtight container at room temperature for up to 3 weeks.

  6. Enjoy with coconut yoghurt, plant milk or as a topping on banana ice cream!
