Peanut Butter filled Chocolate dates

The three most decadent foods combined! Wizardry!
Seriously good for on the go snacks, mini energy boosters or a yummy dessert.

Ingredients:
- 10 Medjool dates
- 2-3 tablespoons peanut butter
- 2 tbsp coconut oil
- 1/2 cup agave nectar / maple syrup
- 1 cup cacao powder
If you don't have the last three ingredients and want a cheaper option you can swap them for:
- 1/2 cup (about 4 oz) vegan dark chocolate
Method:
1. Cut the dates open to remove the pit. If you cut down lengthwise into the dates its easier to fill them.
2.Spoon in some peanut butter and close the dates.
3. Next, melt the coconut oil (or melt the dark chocolate if you swapped ingredients). You can either do this in a microwave or in a small sauce pot on the stove (low heat). Once melted add the syrup and cacao powder and mix till the powder is no longer lumpy.
4. Then dip the dates in the chocolate sauce.
5. Transfer the dates into the fridge and allow the chocolate to harden.
And there you have some healthy mini snicker treats!
In addition you can always add some peanut halves into the dates for an extra crunch.
