Hooray for pancake day! This is possibly the easiest and quickest cooked recipe on my blog. This is a base so you can always add coconut sugar, lacuma powder, protein powder, blueberries etc to make it even better. These are super healthy too! (And one bowl so less washing up!)

Ingredients:

  • 1 Ripe banana

  • 1 1/4 cup Flour or gf oat flour (oats blended)

  • 1 cup Soya milk (or other plant milk)

Method

  1. Mash up banana in a bowl

  2. Add flour and soya milk and mix well (to a smooth consistency)

  3. Either fry in coconut oil or dry fry on medium heat

  4. They cook quicker without oil but be careful they don't burn. You will see them form little bubbles on top - let the colour go slightly darker then.. Flip em! They should be a golden brown.

  5. Add toppings!
