Vegan Banana, Sweet Potato & Coconut Curry

Bananas...curry...say whaaaa?! Hold up, don't close this page! I know this sound like such a weird combo but trust me, it'll turn your world upside down.

So how did I discover this recipe? Well I'll let you in on a little story..When me and my mum went travelling around England we came across a little place named Thaxted. One night in the pub we were staying at 'The Swan Inn', all the power went out. They were unable to serve any food and we were two hungry vegans! Lucky enough there was a little indian takeaway hidden around the corner of the Inn. There we discovered an unusual 'banana curry' staring at us from the menu. Curious we bought it, tucked ourselves up back at the Inn and digged into the curry! (Also spilt my rice all over the floor in doing so) And oh my it was amazing. Since then I have been trying to recreate the dish and alter it to make it better. So here it is, my banana and sweet potato curry! Sweet and savoury unite!

This dish is really good to design to your own taste. I love peanut butter so usually add more of that! This is the base recipe I use but generally add more of whatever I have hiding in the fridge! Butter beans, chickpeas are great to add in as well as mixed vegetables. Its a great way to use up ripe bananas too!

Ingredients:

- 1 diced sweet potato

- 1 banana

- 1 onion diced

- 1 can of coconut milk

- 1 tablespoon curry powder

- small handful of sultanas

- 1 tablespoon peanut butter powder

- 2 minced garlic gloves

= spinach

- 1 tsp ground ginger

- 1 tsp cinnamon

- 1 tsp salt

- pepper

Method

1. Boil the sweet potato until soft around 10-15 minutes.

2. Saute onion in large frying pan. I usually don't use oil just a little water but you can use coconut oil. When soft add the garlic.

3. when onion is golden add the spices followed by the coconut milk and curry powder. You can use half coconut milk and half water if you prefer not to have as much coconut.

4 continue to stir and add the sweet potato, banana, vegetables and peanut butter. Leave at a simmer for a few minutes, you want the sweet potato to go slightly mushy. Add the rest of the ingredients. Taste and adjust any seasonings e.g more salt

5. Serve on a bed of rice or even cauliflower rice if you want a low carb meal :)
