Curried courgette fritters

Eggs are not 'essential' in any recipe, there is ALWAYS a vegan, cruelty free alternative! Fritters are easy to chuck together, uses up any leftovers of previous meals and super cheap! These can be baked or fried, so i'll give you both options.

So i'll start you off with the base ingredients then you can spice up your life with whatever you fancy!

Ingredients:

3 grated zuccinis/corgettes

1 onion

tsp salt

1tsp cuminn

1/2 cup of gf or spelt flour

3/4 tsp ginger

1 tbsp coconut oil/olive oil

1 flax egg, chia egg or egg replacer

1 clove garlic

Method:

1. Preheat oven if baking to 200c

2. Sprinkle salt over grated corgettes.

3. Prepare flax egg, dice onion and mince garlic.

4. Strain courgette using cloth so water is removed. Combine all ingredients in a bowl.

5. form patty shapes using hands and bake for 20-25 or fry for 10/ till golden and crispy! (make sure they are cooked through)
