2 minute Vanilla-Almond & cherry Mugcake

When mumma wants cake, she wants it now! I whipped up this recipe when cake called in an emergency type situation. A coffee was freshly brewed needing a spongey gluten free partner in crime to compliment it..

I dont usually like using the microwave as they just zap all nutritional value out of food but in a society that demands things immediatley i thought id have to create a quick-quick bake!

With the ingredients i just chucked everything into a mug and mixed so just guess with the measurements, no need to get other utensils out. Just be armed with a tablespoon!

Ingredients:

2 tbsp gf flour

1/2 tbsp baking powder

1/2 tbsp cinnamon

1/2 tbsp coconut sugar/stevia

1/2 tbsp vanilla extract

1 tgbsp crushed roasted almond or almond essence

1 tbsp diced glazed cherries or sultanas

1/2 mushed banana

2 tbsp milk

squirt of lemon juice

(i also added a sprinkling of choc chips)

Method:

1. add dry ingredients into mug

2. mix in wet ingredients

3. put in microwave for 2-3 minutes depending on power of microwave.

4. be careful its hot! top with more cherries and choc chips!
